For those of you who don't have Instagram or don't follow me (say Whaaatt? Time to head on over and fix it right away 😉 ) I wanted to share a little of what has been going on recently.
This picture of Konrad and me was taken last week, when we had exactly 4 weeks until our baby girl's due date. Tomorrow already, it will only be 3 weeks!!
We are both super excited to welcome her into this world but naturally also a little nervous at the upcoming change and responsibility we are entrusted with.
But then I think of baby cuddles, neck rolls and chubby thighs and all these cute (pink!) clothes for her and I am nothing but excited again!
These adorable clothes were a gift from my coworkers on my last day of work, which also was last week. This just makes my heart overflow at their kindness and thoughtfulness and at the cuteness of these outfits.
I mean... a baby elephant, googly eyed owls and giraffe footsies... I don't know if I can take anymore.
You didn't think a post about my personal life wouldn't include food, did you?
One of the perks (?) of this last month of pregnancy is that I am constantly grazing. My stomach feels way too tight and squished to ever finish a full meal. Instead I am permanently snacking on something.
Which doesn't keep Konrad from taking me out for amazing breakfast dates (at Cora's). What better thing could you order than Eggs Benedict when you go out for breakfast? (hint: rhetorical question)
You can be sure though that at least half of this platter was packed up to eat (snack on) later.
And while we talk about snacking, this sprinkly donut (Strawberry Vanilla) was my way of celebrating Donut Day last Friday. I didn't make any donuts myself (and I haven't in like forever) but we made Tim Horton's the destination of our evening walk to pick these up.
This idyllic picture is from another evening walk. I absolutely adore the warmer weather - no bundling up before going outside. And as current perk of living in the prairies this time of year, it doesn't get dark until sometime after 10 pm! Which makes for glorious, stretched out sunsets.
Warmer weather = icy drinks! At least for me. This lemonade slushy with raspberries told me that Raspberry Lemonade Popsicles would be a fantastic idea.
And warmer weather also equals ice cream weather. My sister and I went to the Farmer's Market this weekend. And while fresh produce is still sparse this time of year (given the fact that winter only just ended here in Calgary) we enjoyed some amazing gelato.
The flavors (raspberry white chocolate + cookies and sour cherry + lemone) were so creamy and refreshingly delicious!
Here are Conny (ma sista) and I at a screening of CHEF holding a giant popcorn bag. The leftovers were turned into this Sparkling Funfetti Popcorn. If you have a popcorn machine, you can easily do it as well with home popped popcorn following the recipe on that page.
My sister lives in Kelowna (some 8 hours from Calgary) with the rest of my family but she is currently staying with us while she completes a practicum for her schooling. Naturally, we are trying to show her all the sights Calgary has to offer. But almost more importantly, I am trying to give her a taste of all of Calgary's culinary features.
One of those features is Calgary's own Chachi's Sandwich Bar and their amazing Pulled Pork & Mac n' Cheese sandwich!!!
Last, but certainly not least, I had to share this amazing casserole with you. Having been home more in the last weeks I seem to find even more time to experiment with food and try out new recipes. This Nacho Casserole is inspired by Matt from Real Food by Dad (thank you!) and was a major hit here.

Yeah I went to whatever the screening was at Chinook last Wednesday. And I completely agree, who needs action thrillers when you can watch food movies that keep you on the edge of your seat!
