INGREDIENTS
– peanut butter – maple syrup - or honey – coconut oil - or butter – vanilla extract – rolled oats – optional: cinnamon, shredded coconut, raisins
Add the peanut butter, coconut oil, maple syrup, and vanilla to a microwave-safe bowl. Microwave for 30 seconds until the peanut butter has melted slightly. Stir until smooth.
Add the oats and cinnamon, and stir everything until combined.
Spread the mixture on the baking sheet or pan in an even layer. Bake for 10 minutes.
Sprinkle with the coconut and raisins. Stir/flip the granola and bake it for another 10 minutes.
Once the granola has cooled completely, place it in an airtight container. Store at room temperature for 2-4 weeks, or freeze for 3-6 months to keep fresh for longer.
