Pumpkin Pie Crumble Bars

Crust + Topping

Ingredients: flour, oats, salt,  baking soda, sugar, brown sugar,  coconut oil/butter, vanilla

Pumpkin Pie Filling

sugar, brown sugar,  pumpkin pie spice, salt, egg + egg yolk vanilla extract, pumpkin puree, evaporated milk


Make the oat crumbs. Pre-bake half as crust. Mix the filling and pour over crust. Bake for 15 min


Sprinkle the remaining oat crumbs on top and bake 20-25 mins. Then cool 1 hr and chill in the fridge


Slice into squares and serve with vanilla ice cream or whipped cream
