These chocolate Pumpkin Brownies are a delicious pumpkin-flavored fall treat. The batter is made with melted chocolate for extra fudgy brownies that are a great Thanksgiving dessert alternative to pie.
Preheat your oven to 350° F/180°C. Line an 8 or 9-inch (20 or 23 cm) square pan* with parchment paper.
In a saucepan melt dark chocolate and butter/coconut oil on low heat while stirring regularly.
4 ounces dark chocolate, ⅓ cup butter
Once melted stir in sugar, pumpkin puree. Then mix in the eggs and vanilla extract.
1-¼ cup (coconut) sugar, 1 cup pumpkin puree, 2 large eggs, 2 teaspoons vanilla extract
In a separate bowl whisk together flour, pumpkin pie spice, baking powder, and sea salt. Add the dry to the wet ingredients and fold in without over mixing.
¾ cup white whole wheat flour, 1 teaspoon pumpkin pie spice, 1 teaspoon baking powder, ½ teaspoon sea salt
Pour the brownie batter into the prepared baking pan and bake for 30-35 minutes. For fudgy brownies a toothpick inserted into the centre should come out with just a few wet crumbs attached.
Let the brownies cool to room temperature, then chill in the fridge before adding frosting and slicing into squares.
For the frosting, stir together all ingredients in a small bowl. Add more milk to achieve desired consistency. Thicker frosting has to be spread or piped, while thinner icing can be drizzled.
¼ cup almond butter, 2 tablespoons pumpkin puree, 2 tablespoons maple syrup, 1-3 tablespoons almond milk, ½ teaspoon vanilla extract, ¼ teaspoon pumpkin pie spice
Notes
Can also be made in a 9x13-inch (23x33cm) pan. Brownies will be thinner and require only 25-30 minutes baking time.
