Ingredients

  • 1/3 cup oats I used Coach's Oats, old fashioned rolled oats work too
  • 1/2 cup strawberries
  • 1/2 cup coconut milk
  • 1/4 cup coconut cream
  • 1-2 tablespoons maple syrup or other sweetener to taste
  • 1/2 teaspoon vanilla
  • fresh strawberries and dessiccated coconut for topping

Instructions

  1. Add oats to a sealable container (like a mason jar).
  2. Blend strawberries, coconut milk, coconut cream, maple syrup and vanilla until smooth. Add to the oats and shake or stir to combine.
  3. Place in the fridge for at least 4 hours or overnight.
  4. If desired, warm up strawberries and cream oatmeal in the morning before serving. Top with fresh strawberries slices, desiccated coconut and other toppings of choice.
