  • 2 cups diced fresh pineapple
  • 2 medium tomatoes diced
  • 1/3 cup chopped shallots
  • 1/4 cup chopped cilantro
  • 1 mild chili pepper like jalapeno de-seeded and chopped
  • 1 garlic clove minced
  • 2 tablespoons lime juice
  • 1 tablespoon oil
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
