Strawberry White Chocolate Truffles

  • 10.5 ounces white chocolate chips
  • 6 tablespoons coconut butter (not oil!)
  • zest of 2 limes
  • 1 tablespoon lime juice
  • 4 medium strawberries
  • shredded coconut optional


  1. In a small pot over medium heat, melt the white chocolate and coconut butter.
  2. Add the lime zest and lime juice and stir until combined.
  3. Add the strawberries and using an immersion blender, blend together until the strawberries and mixture are uniform in texture. There should be no chunks of strawberries.

  4. Place the pot in the refrigerator or freezer and chill until the candy is firm enough to roll into balls. This took about 3 hours in the freezer.
  5. Roll into 16 1” balls and roll in shredded coconut, if desired.
  6. Keep covered in the refrigerator for up to 1 week or in the freezer for 1 month. Enjoy!
