Literally Rocky Road Bars

These rocky road bars include candy rocks instead of chocolate chips making literally 'rocky'.

Ingredients

  • 225 g Chocolate milk or semi-sweet
  • 100 g / 7 tbsp Butter
  • 2 tbsp Honey or syrup
  • 100 g / 2 cups Mini Marshmallows
  • 100 g Candy Rocks
  • 225 g Biscuits/Digestive Cookies/Graham Crackers

Instructions

  1. Line an 8-inch square pan or form with parchment paper. Leave an overhang to be able to lift out the bars later.
  2. Break or cut the chocolate into pieces, add butter and honey or syrup. Place on top of a double boiler and stir until melted and smooth. Cool for about 10 minutes.
  3. In a large bowl stir together mini marshmallows, candy rocks (reserve a few for sprinkling) and broken up cookies with the chocolate mixture until everything is nicely coated.
  4. Pour into lined form and press in with a spoon. Sprinkle a few mini marshmallows and candy rocks on top.
  5. Place in the fridge and chill for at least 2 hours. Lift chilled and hardened Rocky Rock out of the form and cut into bars.
