Rainbow Salad with Dilly Kefir Dressing

  • 3 cups romaine lettuce chopped
  • 1 hard boiled egg sliced
  • 1/2 avocado sliced
  • 2 tablespoons pumpkin seeds
  • 1 cup heirloom cherry tomatoes halved


  • 1/4 cup sour cream
  • 1/3 cup Lifeway Original Kefir
  • 1 tablespoon dill freshly chopped
  • 1 teaspoon onion minced
  • 1 teaspoon Dijon mustard
  • salt & pepper to taste
  • touch of cayenne pepper


  1. Place the chopped romaine on a large plate and arrange egg slices, avocado slices, pumpkin seeds and cherry tomato halves over top.
  2. To prepare the dressing whisk together sour cream and Kefir. Then stir in chopped dill, minced onion, Dijon mustard and spices to taste.
  3. The recipe makes enough dressing for more than one salad. So use only as much dressing as needed/desired.
