Rhubarb Simple Syrup

A fruity simple syrup made from rhubarb for creative drinks and cocktails all summer long!

  • 1 lb 450 g rhubarb, cut into chunks
  • 1 cup water
  • 1 cup cane sugar*


  1. Place rhubarb chunks, water and sugar in a saucepan and bring to a boil; stir occasionally.
  2. Once boiling, reduce heat to low and simmer for about 20 minutes. Mixture should have thickened.
  3. Pour through a fine mesh strainer. Press on the rhubarb pulp a bit to extract more syrup.
  4. Store syrup in the fridge in a sealable container like a mason jar.

Recipe Notes

* for an unrefined version, boil only rhubarb and water, strain and stir in 1/2 cup of honey/maple syrup/agave nectar
