Greek Spinach Rice - Spanakorizo

Spanakorizo is a traditional Greek dish made of rice and spinach with dill and lemon giving it a fresh and bold flavor.

  • 4 tablespoons extra virgin olive oil
  • 1 cup red onion finely chopped
  • 1 garlic clove minced
  • 1 cup long-grain rice I used Jasmine
  • 8 cups ~ 1 pound/450 g fresh spinach chopped, stems removed
  • 1/2 cup water more as needed
  • 1/2 cup wild fennel fronds or dill, chopped
  • Sea salt and freshly ground black pepper to taste
  • Juice of 2 lemons strained (1 would have been enough for me)


  1. In a large skillet, heat the olive oil on medium heat. Add the chopped onion and cook 2-3 minutes until softened. Stir in garlic and add the rice. Stir over medium-low heat for 3 minutes.
  2. Add the spinach to the skillet and cover. Cook until spinach has lost most of its volume. Stir in water, fennel or dill and salt and pepper to taste. Cover and simmer - stirring occasionally - until water is absorbed and rice is soft for about 25-30 minutes. If necessary for a creamier consistency, add a little more water after about 15 minutes (I added almost another 1/2 cup water).
  3. Finally, add the lemon juice and cook for just another 3 minutes.
  4. I added some sliced green onion on top before serving.
