4tablespoonsextra virgin olive oil
1cupred onionfinely chopped
1cuplong-grain riceI used Jasmine
8cups~ 1 pound/450 g fresh spinachchopped, stems removed
1/2cupwatermore as needed
1/2cupwild fennel frondsor dill, chopped
Sea salt and freshly ground black pepperto taste
Juice of 2 lemonsstrained (1 would have been enough for me)
In a large skillet, heat the olive oil on medium heat. Add the chopped onion and cook 2-3 minutes until softened. Stir in garlic and add the rice. Stir over medium-low heat for 3 minutes.
Add the spinach to the skillet and cover. Cook until spinach has lost most of its volume. Stir in water, fennel or dill and salt and pepper to taste. Cover and simmer - stirring occasionally - until water is absorbed and rice is soft for about 25-30 minutes. If necessary for a creamier consistency, add a little more water after about 15 minutes (I added almost another 1/2 cup water).
Finally, add the lemon juice and cook for just another 3 minutes.
I added some sliced green onion on top before serving.
