Ingredients

  • 1 can (19 oz./540 ml) green lentils
  • 2 tbsp butter
  • 1/2 large onion chopped
  • 2 cloves garlic chopped
  • 1 tsp curry powder
  • 1 tsp sugar
  • 1 tsp ground ginger
  • 1/4 tsp chili powder
  • 1/2 tsp paprika
  • ground black pepper
  • 1 1/2 tbsp red curry paste
  • 1 can (14 oz.) tomato puree
  • 1/2 cup coconut milk
  • green onion parsley or cilantro; for garnish

Instructions

  1. Drain and rinse the lentils. Set aside.
  2. Saute the chopped onion in melted butter over medium heat. Once translucent add garlic and continue cooking until golden.

  3. Add spices (curry powder, sugar, ginger, chili, pepper and red curry paste) and fry for a couple minutes while stirring. Add tomato puree, stir and simmer until smooth.

  4. Add in lentils and coconut milk and simmer for about 15-20 minutes.

  5. Serve over quinoa or rice or with flatbread. Garnish with green onion, parsley or cilantro.
