In a large mug, whisk together coconut flour, baking soda, and salt.
Add egg, coconut oil, maple syrup, coconut milk, and vanilla extract and mix thoroughly to combine. Very gently fold in optional sprinkles.
Microwave for about 2 minutes. Start checking at about 1.5 minutes. Let sit for a couple minutes before eating.
Optionally, top with a few more sprinkles before serving.
Oven Option:
This vanilla mug cake can also be baked in an oven preheated to 350° F. Baking mug cake will take anywhere from 20-35 mins. Timing will depend on a number of factors like the cup’s diameter, wall thickness, etc. You want the cake to be set but still springy.For a quick oven method, divide the batter into 2-3 lined muffin cavities. It will take only about 15 mins that way.
