This eye-catching two tone Strawberry Kiwi Smoothie can be enjoyed in two delicious unique ways - as a nourishing breakfast smoothie bowl and also as refreshing popsicles.
Strawberry Kiwi Smoothie
Servings1smoothie bowl or 4 popsicles
1/2 - 3/4cupbrewed green teadecaffeinated for kids, cold, divided
sweetener of choiceraw honey, maple syrup, agave, if desired
1Zespri Sungold Kiwifruitpeeled and cut to separate seeds
1cupbaby spinachor other tender greens, lightly packed
thick slices of Zespri Sungold Kiwifruit
For the strawberry smoothie layer, blend 1/2 frozen banana, frozen strawberries and enough green tea to make the blender whirl smoothly. Taste and add sweetener, if desired. Set aside (in fridge or freezer).
To make the kiwi smoothie layer, blend the other 1/2 frozen banana, 1 Zespri Sungold Kiwifruit (without seeds), baby spinach, avocado with as much green tea as needed and sweetener, if desired. Once smooth, add the kiwifruit seeds and pulse only a few times to incorporate (you don't want to crush the seeds).
To serve as two tone smoothie bowl, hold a small saucer as a divider in the center of a bowl. Pour or spoon the strawberry and kiwi smoothie layers on either side of the saucer, then lift out the saucer carefully. Add toppings of choice like fruit slices, berries, edible flowers, seeds (hemp hearts, chia), granola etc.
To make layered popsicles, place a slice of Sungold Kiwifruit at the bottom of each popsicle mold cavity. Make sure the slice is firmly touching one side of the mold's wall, so that no smoothie mixture will run in front of it.
Now carefully spoon first the green smoothie, then the strawberry smoothie into the mold. Freeze overnight or better yet for 24 hours. To unmold, run under luke warm water before pulling out the popsicles.
