These Rocky Road Bars are made from marshmallows, chocolate candy, and digestive biscuits (you can also use graham crackers or rice crispy cereal). Everything is held together with a delicious chocolate coating.
Line an 8-inch square pan or form with parchment paper. Leave an overhang to be able to lift out the bars later.
In a heat proof bowl combine chocolate chips (chocolate bar pieces), butter and honey. Place on top of a double boiler (saucepan with simmering water) and stir over low heat until melted and smooth. Cool for about 10 minutes.
Alternatively microwave in short bursts, stir and keep microwaving until all melted and smooth.
In a large bowl stir together mini marshmallows, ⅔ cup chocolate chips/candy rocks (reserve a few for sprinkling) and broken up biscuits/Graham cracker/rice cereal with the melted chocolate mixture until everything is nicely coated.
Pour everything into the lined baking pan. Spread out and press down to even it out with a spoon. Sprinkle a few mini marshmallows and candy rocks on top.
Place in the fridge and chill for at least 2 hours. Lift chilled and hardened rocky road bars out of the form and cut into bars.
