Instructions
Preheat the oven to 350°F.
In a large pan melt the butter on medium heat and soften the sliced onions for 3-5 minutes. Then let cool.
In a large bowl mix together the eggs and milk. Then whisk in the cornmeal, salt, and baking powder.
Fold in the grated cheese, cottage cheese, cooled onions, and optional corn kernels.
Pour the batter into a greased or lined 8-inch square baking dish. Bake for 45-60 minutes until top is golden-brown.
Let cool then cut into squares.

*NOT the Mexican nixtamalized cornflour for tortillas
**or about 1 cup frozen or fresh corn kernels
