This delicious Instant Pot Cajun Chicken Pasta is the ultimate quick dinner recipe. Just 30 minutes from start to finish is all it takes to serve you family a healthy homemade meal. This one pot cajun pasta with gluten free and dairy free option also is a fantastic meal prep recipe.
Press the ‘Sauté’ button on the Instant Pot and wait until the display shows ‘HOT’. Add the oil and diced onion. Sauté while stirring until the onions start to soften.
Cajun Seasoning: This is not exactly a kid-friendly recipe. The Cajun seasoning gives this dish a spicy kick that is too much for my 4-year-old. For her, I modify the seasoning recipe and omit the cayenne pepper.
Pasta: I have used regular, whole wheat and corn/rice based gluten free pasta varieties in this recipe with success. I don’t recommend using a bean/legume pasta because those usually require to be well rinsed after cooking which isn’t possible in this one pot recipe.
Cook times depend not on the type of pasta but the recommended regular cook times on the package. This approximate ratio has worked well for me:
