This delicious Instant Pot Cajun Chicken Pasta is the ultimate quick dinner recipe. Just 30 minutes from start to finish is all it takes to serve you family a healthy homemade meal. This one pot cajun pasta with gluten free and dairy free option also is a fantastic meal prep recipe.
1bell peppersmall dice (I like to use ½ red + ½ green)
1.5cupschicken or vegetable broth
8ouncespastaregular, whole wheat, or gluten free, I like to use a spiral shape
½cupgrated parmesan cheeseoptional

Instructions
Press the ‘Sauté’ button on the Instant Pot and wait until the display shows ‘HOT’. Add the oil and diced onion. Sauté while stirring until the onions start to soften.
Add the chicken cubes and sauté 2-3 more minutes. Then press ‘Cancel’ to turn off the heat.
Stir in the Cajun seasoning, black pepper, minced garlic, tomato paste, diced tomato and bell pepper. Stir to combine.
Pour in the broth and spread out the dry pasta on top. Do NOT stir. Only press down gently to submerge as many of the noodles into the broth as possible.
Close the lid and turn the venting valve to sealing position. Press ‘Manual’ and select 3-5 minutes high pressure (check for exact cook time below in Notes).
The Instant Pot will take about 10 minutes to pressurize before the timer will start counting down. Once the cook time is up, press ‘Cancel’ and release the pressure by turning the valve to venting position.
Once all the pressure is released, open the lid and stir in optional parmesan cheese.
Serve with sliced green onion, or chopped parsley/cilantro.
Notes
Cajun Seasoning: This is not exactly a kid-friendly recipe. The Cajun seasoning gives this dish a spicy kick that is too much for my 4-year-old. For her, I modify the seasoning recipe and omit the cayenne pepper.Pasta: I have used regular, whole wheat and corn/rice based gluten free pasta varieties in this recipe with success. I don’t recommend using a bean/legume pasta because those usually require to be well rinsed after cooking which isn’t possible in this one pot recipe.Cook times depend not on the type of pasta but the recommended regular cook times on the package. This approximate ratio has worked well for me:regular cook time ~ 9 minutes = 3 minutes in Instant Pot 12 minutes = 4 minutes 15 minutes = 5 minutes
