Thanks to this recipe for a Pumpkin Oatmeal Cookie in a Mug you can make a yummy cookie for one without turning on the oven. It is gluten free, vegan and uses no refined sugar, and deliciously pumpkin spice flavored.
Add the coconut oil to the mug and microwave if needed to melt the oil. To the melted coconut oil add coconut sugar, pumpkin puree, and vanilla extract. Stir with a fork until combined.
Now add the rolled oats, oat flour, salt, and pumpkin pie spice. Mix to combine everything.
Sprinkle a few (optional) chocolate chips on top.
Microwave the cookie in a mug on high for about 1 minute.
Careful, it will be hot! Let it cool a for a couple of minutes before enjoying this delicious mug cookie.
Notes
Microwaves vary in strength. You don’t want to overcook the mug cookie, so start checking at 45 seconds. Add 15 second intervals until cooked to desired consistency.
