Instructions
In a microwavable mug, melt the butter first (or add oil). Add mashed banana, brown sugar and vanilla extract. Whisk together with a fork until well combined.
Next add the dry ingredients - old-fashioned oats, flour, salt and cinnamon - to the mug. Stir everything together until combined.
Finally, fold in the chocolate chips and place a few on top.
Microwave the oatmeal mug cookie for about 1 minute.
Careful, it will be hot. So let it sit for a couple of minutes to cool down before digging in.
Notes
Microwaves vary in strength, so start checking for doneness after about 45 seconds and add 15 second bursts until cooked to liking.
