Do you like going to coffee shops as much as my husband and I do?
There were times on our travels when we went out of necessity just to get our daily caffeine fix. Times when the free instant coffee from the hotel lobby just wouldn't do, and when our palettes sought after something more... Proper.
Different Coffees For Different Times
However, nowadays we have invested in a small travel kettle and a manual drip coffee maker. Do you know what I mean? It is hard to explain - different situations call for different coffees. If you're in a hurry, cool, drip coffee it is. If it's the weekend and you would prefer to sit and have a read, then something like a cafe will suit perfectly.
And so, we love our occasional coffee outings and some places see us returning more often than others. One example of this is the place where we had these Banana Chocolate Chip Muffins.
Akha Ama Cafe in Thailand Seriously Rocks
This is the entrance to Akha Ama Cafe in Chiang Mai, Thailand. Doesn't it look all quaint and cozy hidden behind the greenery? If you follow me on Instagram, you have probably seen a number of pictures from this place already.
It is one of those coffee shops that has it all: fantastic brews, an ethical business mission, great service, a warm atmosphere that invites to stay longer, free WiFi, and very reasonable prices on top of all this.
Why Akha Ama? Well, the Akha are a hill tribe living in the mountains around Chiang Mai. This coffee shop buys their fair-trade coffee beans from one Akha village that grows, processes and roasts their own beans. This way, they eliminate the middleman and more revenues remain to support the village. Pure genius.
Aside from their inspiring mission, I think the interior needs special mention as well. All the wooden furniture has many colorful, comfy cushions, there are lots of artistic wooden elements on the walls, and look at that table - the one I took the pictures of the muffin on.
Cafes are Sanctuary
The dark, solid wood must have been refurbished; I don't believe all the characterful distress marks come from coffee cups. I am in love with this table. I wonder if they'd allow me to take all my food pictures on it?
I don't want to leave you without a recipe, in case you find yourself craving some classic Banana Chocolate Chip Muffins. Recently, I joined Tasty Kitchen (I don't know what took me so long). Wendy's recipe (which you'll find below) received great reviews on there. Let's get to it!

I've made these muffins a few times and I absolutely love them! The first time I did them I didn't realise I had any eggs at home until halfway through the recipe but continued anyway - and I must say they tasted even better without it! I thought the consistency turned out better. I would definitely recommend to try the recipe without using the eggs!
Regina
Thanks for sharing the results of your "happy mistake" with us Lina 😀
You make me want to do some side-by-side taste testing. Next time I might put 1 egg in half of the batter and leave the other half without. Family members will have to be my blind test persons. I'll be sure to post the results 😉

I love bananas and chocolate. Well, I pretty much love anything with chocolate so you can't go by me. 😉 Your muffin looks like you bought it at a coffee shop. I love coffee shops. I just buy the coffee though. 🙂

We never go to coffee shops because it's more fun to bake at home plus I know I'll probably be disappointed. Oh, and the husband and I don't drink coffee. 🙂
I'm happy you got yourself a little coffee maker thing!
And these look lovely! I love banana everything and hate that I'm allergic to the things.
Regina
What? Allergic to banana? Oh no! I think its the first time I hear of someone with a banana allergy.
Jacquee
I love anything that pairs chocolate and banana ( oh, and peanut butter)!! I'm with you - I want that table - the texture in the photos, look a bit like elephant skin!
Regina
You are right Jacquee, looking at it again the table texture totally reminds me of elephant skin 😉

I honestly think bananas and chocolate are a match made in heaven. I've made a stellar chocolate chip banana muffin before but something's telling me I need to make them again ASAP. I can never get enough muffins OR enough bananas OR enough chocolate. 😉

I actually had this particular muffin with a mind-blowingly good caramel macchiato. Makes me contemplate to one day try a variation of the muffin incorporating caramel 🙂

Perfect way to use up those ripe bananas that seem to just...multiply!
Regina
Yes! We always seem to have those overripe ones too, no matter how few or many we get 🙂
