This bright and refreshing tropical Carrot Smoothie is full of beta-carotene and Vitamin A. Plus, it will instantly transfer you to a tropical beach destination (at least, if you close your eyes).
If you've been reading for a while, you know that I love my smoothies. And to my delight, my baby girl does too!
She has just figured out how to ask for food (other than crying) by standing in front of the fridge and smacking her lips. I'll have to try and take a video of her in smacking action (it will probably be on Instagram). It's the cutest thing, really.
Until she starts doing it every 10 minutes and it stops being cute. I start wondering, if she really can be that hungry. At times it feels like she consumes more food than me.
But then again, she usually has healthy things like veggie sticks, and her favorite Thai pineapple and cherry tomatoes are high on the favorite list too.
Olivia the Smoothie Master
You can be sure, that she is right by my side when I am having a smoothie and smacking her lips as well. It must be her constant running around (whenever she isn't sleeping) that makes her so hungry.
When I first started having smoothies years ago, they were mainly fruit and yogurt-based. Nowadays, I can't make a homemade smoothie without at least 1 vegetable.
To my husband's demise, unfortunately. He just can't seem to get into green smoothies.
Have Fun with Your Veggie Choices
So today's tropical carrot smoothie creation was made with him in mind. Sweet Thai pineapple, with juicy mango and there's even a vegetable in it, but it isn't green! For myself I'll often throw in a handful of spinach (after pouring his serving).
I can't even taste it, but just seeing it's green will keep Konrad from trying it. Does anyone have tips on how to convert a green smoothie non-believer?
My Daughter Also Loves Baby Popsicle Molds for Smoothies
Luckily, Olivia isn't that picky. She'll gladly have any of my smoothie creations. For her I often freeze some of it in this baby popsicle mold.
She goes nuts over those. It was no different with the leftovers of this tropical carrot smoothie when I froze them as popsicles for her.
I used carrot juice for this one, but have also used whole carrots (cut up) with water. You may just have to blend it a little longer and a powerful (heavy-duty) blender will also help to get the carrot really smooth. Nothing worse than a smoothie wannabe, that actually is vegetable puree.
Making the Smoothie Healthier and Pick a Great Blender
Lastly, and simply to increase the nutritional value a little, I also added some ground chia seed to the mix. Ground flax, maca powder etc. would be other options. Yum!!!
