This delicious and refreshing Cucumber Apple Juice with lime is made in a slow juicer or blender. It's a fantastic drink to cool down with on hot summer days.
The inspiration for this cucumber apple juice came when I reviewed the Amzchef juicer recently. Juicing fruit and vegetables is wonderful because it allows you to obtain as much juice as possible from the foods while allowing you to still access all of their nutrients. However, you don't require a special juicer to make this green juice recipe as blending it in a high-speed blender will suffice as well.
The combination of cucumber, apple, and lime is refreshing with some sweetness and tanginess. Served over ice, it is excellent to drink by the pool or for summer barbecues.
Ingredients
This cucumber apple lime juice recipe requires only a few simple whole ingredients, making it a healthy and nutritious drink. Here is what you will need:
- large cucumber
- Granny Smith apples
- seedless lime - or 2 key limes, or ½ lemon
See recipe card for quantities.
Instructions
There are two methods you can use to make this apple cucumber juice at home; in a blender or with a juicer. If using a blender, you can choose to strain it or serve it unfiltered if you like your juice more pulpy. Here is how you make the juice:
- For the juicer method, begin by washing your produce well. Cut up the cucumbers and apples. Peel the lime.
- Feed all the ingredients through your masticating juicer one piece at a time.
- If I see that the pulp comes out very wet, I will feed it through the juicer one more time.
- Taste and add more lime juice if desired. Serve over ice.
Blender Method
- For the blender method, blend all of the ingredients in a high speed blender.
- If you would like to make an unstrained juice, I recommend trimming off the ends of the cucumbers and coring the apples.
- Add the cucumber and apple chunks to the blender. Squeeze the lime over top and blend well. If needed, add ¼ cup of water to get the blender going.
- Serve as is over ice, or first strain through a sieve, cheesecloth or nut milk bag to remove the pulp.
Hint: Taste the juice at the end to see if it needs more lime juice and add more if needed. Alternatively, you can add lemon juice which has a sharper flavour than lime juice.
Variations
Homemade juice is an amazing way of using up fresh vegetables and fruit you have in your kitchen. If you have other ingredients to use up, you can feel free to add them to this cucumber apple juice. Here are some ideas for how you can use this cucumber juice as a base for other ingredients.
- Make a Cucumber Apple Ginger Juice - If you enjoy the taste of fresh ginger, you can juice ginger to taste with the cucumber, apple, and lime. It will add a lovely warm and spicy note to the juice.
- Replace the Apple with Pineapple - When in season, pineapple is super sweet and delicious. It would pair beautifully with the fresh lime juice and cucumber in this recipe.
- Substitute the Apple with Watermelon - Watermelon, lime, and cucumber are a match made in heaven, so why not combine them into a juice? Feel free to garnish it with some sliced mint for added freshness when you serve it.
- Turn it into Apple Cucumber Celery Juice - Enjoy the delicious refreshing flavor of the original recipe and add the benefits of celery juice. Simple juice 2-4 stalks of celery alongside the rest of the ingredients.
Storage
Fresh juice is best to enjoy as soon as it is made for full nutritional benefits. However, if you would like to make this nourishing concoction in advance of when you plan to serve it, it should keep in the fridge for 1 to 3 days. To store it in the fridge, simply place it in a pitcher for easy pouring into individual glasses when you plan to serve it.
Top tip
Use the freshest cucumbers, apples, and limes in this apple cucumber juice recipe as they will have the best flavour and produce the most juice.
