Coming to Thailand meant a lot adjustments for us. We were looking forward to many of these changes - more family quality time, warm weather year-round, and the generally laid-back Thai lifestyle.
However, I didn't anticipate how much my work in recipe development would be affected. Chiang Mai is the second-largest city in Thailand with a large expat community. So you'll find plenty of grocery stores carry a wide range of imported goods. Technically, I could keep cooking just the way I did back home in Canada.
All this imported products come with a big price tag though. After conversion, many items cost more than they do at home. It just doesn't make sense to live in Thailand and spend more on groceries than in Canada.
Of course, the answer is to work with local ingredients. That's easier said than done though. There have been numerous times, where I have great recipe inspiration by local products - only to realize that the remainder of ingredients where anything but local.
I think it just took a while for my recipe developing mind to shift. Once the local ingredients became second nature (more or less) things started to get easier, less stressful and more affordable.

Tropical Pineapple Tomato Salsa
The inspiration for this recipe were all the juicy, sweet pineapples we get to enjoy here in Thailand. Olivia especially, was completely infatuated with pineapple for a while. She had some every morning.
You know how toddlers eat. They manage to get food all over themselves and their surroundings. Whenever she had pineapple we had to be extra diligent to clean her up afterwards. As delicious as sweet pineapple is, rashes from it's juice are still no fun.
Pineapple tomato salsa however, is all the more fun. It's a delicious appetizer scooped with tortilla chips, makes a wonderfully tropical taco filling and a juicy topping for grilled chicken or fish.

Pineapple Tomato Salsa Recipe
Ingredients
- 2 cups diced fresh pineapple
- 2 medium tomatoes diced
- ⅓ cup chopped shallots
- ¼ cup chopped cilantro
- 1 mild chili pepper like jalapeno de-seeded and chopped
- 1 garlic clove minced
- 2 tablespoons lime juice
- 1 tablespoon oil
- 1 teaspoon cumin
- ½ teaspoon salt
Instructions
- Add all ingredients to a bowl and stir to combine. Taste and adjust seasonings to preference.
- Serve this pineapple salsa with tortilla chips, in tacos or as a side for fish or chicken.
