These Apple Pie Breakfast Cookies are one delicious, healthy way to eat dessert for breakfast. The cookies are gluten free, refined sugar free, with a vegan option.
In a large bowl stir together old fashioned and quick oats, ground flax, salt and spices.
In a smaller bowl whisk together eggs, apple sauce, coconut sugar and melted coconut oil. Add to the dry ingredients and stir to combine. Fold in the diced apple, walnuts and raisins.
Drop ¼ cup sized portions of batter onto a parchment lined baking sheet. Flatten the cookies slightly, as they won't spread in the oven.
Bake for 15-20 minutes until set. Let the cookies cool on the baking sheet before transferring to an airtight container.
Notes
To make these breakfast cookies vegan, flax eggs can be used as replacement for real eggs. They will be a little looser and might need a few extra minutes in the oven.
