Mother’s Day is only a couple of weeks away. This will be my first ever Mother’s Day as a mom. My baby girl is less than 1 year old and between her and me it’s mommy & baby day every day!
But in just a few years this day will start having meaning for her. This brings me back to my kindergarten and Sunday school days, where I was making little crafts to give to my mom. As far as I can remember, it was there, that we were encouraged to help out or make breakfast for our moms on Mother’s Day.
And this developed into a tradition for all the years that I lived at home. Me and my sisters would get up really early to set the breakfast table and make coffee, so that everything was ready and waiting for our mom once she got up. At least for one meal that day, she got a break. Because for some reason I don’t recall us girls ever taking over for lunch or dinner on Mother’s Day.
If you are also planning a Mother’s Day breakfast or brunch, let the following ideas inspire your menu.
1. Mimosas
In case you still have to put on some finishing touches with the food, have a drink ready for mom. It could be her favorite morning beverage, like coffee or tea. But why don’t you treat her to a fancy Sunrise Mimosa for a refreshing change.
2. Quiches
Quiches are like a breakfast-version of casseroles. You can combine several food items all into one dish and serve it conveniently in slices. This Crustless Vegetable Quiche has eggs, bacon, cheese and plenty of vegetables in it.
For a heartier quiche recipe, check out these Mini Salmon Quiches.
3. Pancakes
Pancakes are a favorite breakfast staple and look also great on a brunch table. With these Whole Wheat Greek Yogurt Pancakes you are even providing mom with a nutritious start to the day.
4. Muffins
Muffins are a great on-the-go breakfast, but they are just as great when enjoyed in the comfort of a stretched-out brunch. I have plenty of muffin recipes on here, but these Pumpkin Coconut Flour Muffins are by far the most popular.
5. Parfaits
Simple granola gets turned into a fancy parfait with just some fruit and yogurt. It’s like a breakfast dessert!
6. Sweet Rolls
Sweet carbs, especially hot from the oven are pretty much impossible to resist. Whether in the form of sweet rolls or some fresh scones, sweet breads are an easy crowd pleaser.
7. Smoothies
Want to treat a fit mama? She will absolutely appreciate a delicious (green) smoothie, especially if she doesn’t have to clean the blender afterwards!
BONUS: Baked French Toast with Macerated Berries
This Baked French Toast Casserole can be prepared ahead. Get it ready the night before and on Mother’s Day just bake it fresh. It’s perfect served with fresh berries macerated in Grand Marnier and maple syrup!
Sweet Finish
To end your Mother’s Day brunch on a sweet note, serve this amazing No Bake Chocolate Tart with a luscious fruit topping. This tart may look and taste decadent, but it is also gluten free, vegan, paleo friendly and only sweetened with dates!
