This White Chocolate Clusters Recipe of sesame, sunflower seeds, and slivered almonds are held together by tasty white chocolate and make a wonderful no-bake treat for summer or any time of the year.
I have to warn you about these white chocolate seed clusters... They are highly addictive!
Seriously, I dare you to make these and have only one. Impossible! In my humble opinion.
Here we have roasted sesame and sunflower seeds and slivered almonds, all held together with sweet white chocolate in one 2-bite cluster. Two bites just won't do to savor all the nutty flavors and crunchy texture that make this treat so amazing. Therefore, you need more than one! See. Point made 🙂
Starting Off the Summer No-Bake Party Strong
After sharing a couple of my MIL's recipes (check out her healthier cinnamon buns or the white layer cake), I thought it was time to share with you these treats (they might as well be called crack-bites) from my mom. Since there is no oven needed to make them, they are perfect to start off this week-long Summer No-Bake Party.
Maybe you are wondering about the funny name in the title? Well, in our family we call these clusters Vogelfutter - which translated from German means 'bird seed'. Mighty weird, I know, but with all the seeds and nuts involved, this treat could even be considered half-healthy. One-third healthy. Maybe. Surely.
My family has been making these clusters for years exactly like this. Actually, we always make a huge batch, but I halved the recipe for you below. When we were visiting my parents a couple of months ago I just couldn't help myself snacking from my mom's stash - often! I tell you, addictive... And of course, remember you can change the portion of any recipe by increasing or decreasing the ingredients in equal intervals (multiply everything by 2 for a double batch, for example).
Roasting Seeds, and Adding White Chocolate!
To make these white chocolate clusters you just have to roast first the sunflower, then sesame seeds and then slivered almonds in a dry pan on low heat. It has to be in this order - otherwise you will burn one ingredient while the other is barely roasted. Heed this warning!
Add white chocolate wafers to the still-hot seeds and stir until all the chocolate is melted. Drop mounts onto lined sheets and wait until the clusters are set.
It is important to use tasty, good white chocolate. You can use white chocolate in another form than wafers or melts, but just the heat from the roasted seed might not be enough to melt it then and you might have to put it back on the heat for a little bit.
Recipe
White Chocolate “Bird Seed” Clusters
Ingredients
- 1 cup sunflower seeds
- 1 cup sesame seeds
- 1 cup slivered almonds
- 1-¾ cups white chocolate wafers or candy melts
Instructions
- In a large pot or pan roast the sunflowers seeds on low heat stirring often.
- Add sesame seeds when the sunflowers seeds just barely start to brown.
- Stir in slivered almonds when you start seeing the sesame seeds browning.
- Take the pan of the heat once almonds are barely roasted (careful - they burn quickly). Stir in white chocolate wafers.
- The heat from the seeds and nuts should be enough to melt the white chocolate wafers. If using chocolate chips or chunks, you might have to put the pan back on the heat to melt all of the chocolate.
- Spoon mounds of the mixture onto lined baking sheets. Let the clusters sit at room temperature until the chocolate is set or speed up the process in the fridge.
- Store the clusters in an airtight container.

Can you please tell me how many clusters I will get out of this recipe proportion, if I want them to be about 1,5 inch in diameter?
Regina | Leelalicious
Hi Natalya, I think my clusters are about 2 inches and we around 30 in a batch. So I am guessing at 1.5 inches you will get maybe about 45-50?
