I work from home while taking care of my baby Olivia, so on regular mornings, we aren't rushed to get out of the house. Time, however, is still a precious commodity for me. I have to choose wisely what I can commit to and what really needs to get done any given day.
While getting ready for our road trip to Saskatoon last weekend, I realized that some of my time-saving practices can actually slow me down. You see, I thought packing would be a breeze. How long can it take to quickly pull together 2-3 outfits for me and Olivia, anyway? Turns out, longer than I thought. Since I hadn't folded laundry for the last 4 or 5 loads.
I like to work in bulk. Usually I take Friday or Saturday night, after Olivia goes to bed, to fold everything at once while sipping on a glass of wine and watching a movie or catching up with a show.
We Wound Up Having a Great Time in Saskatoon
Yes, my weekend activities have drastically changed since becoming a mom! Well, I wasn't quite caught up with folding. So finding that top that matches the baby jeggings, or a partner to the tiny baby socks in a BIG pile of laundry was pretty close to the needle-in-a-haystack story.
All worked out in the end and we had a wonderful time catching up, hanging out and enjoying great food in Saskatoon.
What's more, on our last morning there, Konrad's sister took us to a quirky little cafe with pieced-together colorful furniture, great coffee, and delicious food.
Cafe-Inspired Quinoa Flakes Porridge
Today's Quinoa Flakes Porridge was inspired by the meal I had in that coffee shop. When I experimented with recreating it at home, I was shocked by how fast it is to prepare.
This was my first time working with quinoa flakes. Unlike whole quinoa seeds, they cook in absolutely no time. Pretty much like instant oatmeal.
To the quinoa porridge, that only takes 1 minute to cook in the microwave, I added Greek yogurt, berries and hemp hearts. A final drizzle of maple syrup and a nutritious, protein-rich breakfast is ready to be enjoyed.

Quinoa Flakes Porridge
Ingredients
- ½ cup quinoa flakes
- 1 cup water part can be replaced with milk or cream
- pinch of salt
- 2 tablespoons Greek yogurt
- ½ cup berries fresh or frozen (thaw frozen berries)
- 1 tablespoon hemp hearts shelled hemp seeds
- 1 tablespoon maple syrup or to taste
Instructions
- Combine quinoa flakes, salt and water (I like to replace a couple tablespoons with milk or cream) in a bowl. Microwave for 1 minute.
- Top with Greek yogurt, berries and hemp hearts. Drizzle with maple syrup.
