These Earl Grey Cupcakes are light and fluffy with a lovely drizzle of glaze that is infused with Earl Grey tea powder. Made with coconut flour they are also gluten free. Dairy-free, paleo, and low carb options are included
These Earl Grey Cupcakes are inspired by my Earl Grey Tea Cake recipe, which is a loaf-style cake with a light bergamot scent and a sticky syrup to soak in and keep it moist. However, the main difference between my Earl Grey Cupcakes and Earl Grey Tea Cake besides their shapes is that the cupcakes are gluten-free whereas the tea cake is not.
These cupcakes make for a wonderful fragrant dessert to have with a freshly brewed pot of tea or coffee. Besides having them as a treat any day of the week, they would also be perfect to serve to guests or special family get-togethers. The drizzle of glaze really takes the cupcakes up a notch.
Ingredients
The ingredients in this cupcake recipe are inspired by both my Earl Grey Tea Cake and my various coconut flour muffins. Here is what you will need to make these cupcakes.
- almond milk - or other unsweetened plant milk
- Earl Grey tea bags
- melted butter - or coconut oil
- honey
- sugar - or coconut sugar
- eggs
- coconut flour
- salt
- baking powder
- lemon zest
Instructions
- Heat the milk in a small saucepan and stir in Earl Grey tea powder. Allow it to steep for 5 to 10 minutes.
- In a medium bowl, whisk the Earl Grey tea milk with the melted butter/coconut oil, honey, sugar, and eggs until combined.
- Add the dry ingredients like coconut flour, salt, baking powder, and lemon zest to the wet mixture, and stir until combined.
- Divide the cupcake batter into a lined cupcake pan with 12 cavities. Bake until an inserted toothpick comes out clean. Allow to cool completely.
- In a bowl, whisk the powdered sugar, with the honey, lemon juice, and a pinch of Earl Grey tea powder until combined. Drizzle over the cooled cupcakes and serve.
Hint: If you prefer the cupcakes without tea leaf flecks, you can steep the tea bags in the milk for the full 10 minutes, then when you remove the tea bags, press the tea bags to squeeze as much of the liquid from them back into the milk as possible.
Equipment
A muffin pan is essential to making these cupcakes, however, if you don't have a good muffin pan, you could try baking these cupcakes in a loaf pan or round cake pan instead. You would simply have to adjust the baking time to ensure that the batter cooks through.
Coconut flour cupcakes release easiest from parchment paper cupcake liners. However, silicone muffin cups are wonderful if you would prefer not to have to buy liners for baking all of the time. The benefit of silicone muffin cups is that they are reusable and the muffins unmold from them quite well.
Storage
These Earl Grey cupcakes should be stored in an airtight container and should keep fresh for up to 3 of 4 days. However, if you would like to store them for longer, you can place the baked cupcakes (without the glaze) in the freezer for up to 3 months. Then, once thawed, you can make the glaze fresh to top them with.
Variations
- Add a Lemon Zest Garnish - Once you have glazed the cupcakes, you can sprinkle some lemon zest on top for a pretty yellow garnish.
- Make Them Earl Grey Lavender Cupcakes - If you like the floral note that culinary lavender provides to baked goods, simply add some dried lavender into the batter.
- Add a Cream Cheese Frosting - If preferred, you can top the cupcakes with a cream cheese frosting rather than the Earl Grey tea glaze. Simply infuse some of the tea leaves into the cream cheese frosting from some added Earl Grey flavour.
- Top the Cupcakes with Whipped Cream - For an easy, fluffy cupcake frosting, you can whip some heavy cream with some icing sugar and Earl Grey tea leaves until stiff and then use a piping bag to pipe the cream on top of the cupcakes. Or make whipped coconut cream.
Top tip
Be careful not to overbake the cupcakes! To test when the cupcakes are baked, they should be lightly golden on top and spring back when pressed, and if you insert a toothpick in the middle, it should come out clean.
FAQ
Earl Grey is flavored with bergamot oil, although these days, many Earl Grey brands use artificial flavoring to achieve the bergamot taste.
Making Earl Grey cupcakes is easy. This recipe begins with infusing milk with Earl Grey tea, and then you mix a batter together of the tea milk, coconut flour, honey, eggs, butter/coconut oil, sugar, and other ingredients until smooth. Then, once baked, you can top the cupcakes with a dreamy glaze made of icing sugar, lemon, honey, and Earl Grey tea powder.

Ingredients
- ½ cup almond milk or other unsweetened plant milk
- 2 Earl Grey tea bags
- ½ cup melted butter or coconut oil

- In a small saucepan heat the milk to a gentle simmer, then take off heat. Open the Earl Grey tea bags. Reserve a pinch of the tea powder for the glaze. Empty the remaining contents into the milk. Let steep 5-10 minutes.
- Preheat the oven to 350°F/180°C. Line a cupcake pan with parchment or silicone liners.
- In a medium bowl whisk together the Earl Grey tea milk, melted butter/coconut oil, honey, sugar, and eggs.
- Add the coconut flour, salt, baking powder, and lemon zest and mix to combine everything.
- Divide batter into 12 cupcake cavities and bake for 17-20 minutes until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool before adding the glaze.
- For the glaze, whisk together powdered sugar, honey, lemon juice, and the pinch of Ear Grey tea powder until smooth. Spread the glaze on top of the cooled cupcakes.
