I guess summer is coming to an end.
And, I can't change it, whether I like it or not. Dang. I love this season. Then again... I've lived all over the world, and my husband and I have experienced what true heat is like - I'm talking to you, SE Asia. Nevertheless, heat usually means sun, and I love the sun. As such, there's nothing to do about it except to accept the change of season as our fate.
This means that soon, there won't be as much fresh, ripe, locally-grown fruit available.

But I sure won't let the departure of summer deter me from some of the fantastic healthy habits that I have gotten into - like having a vitamin-boosting smoothie on an almost-daily basis (usually for breakfast or lunch).
It's just a matter of working with what is available. Take the carrot-mango-apple combination of this smoothie, for example. We have carrots and apples available pretty much year-round. Although the in-season-ness will alter as the year goes on, they are pretty much a constant. And, for the mango part, I am using conveniently frozen mango chunks. I like some chill-factor to my smoothies anyway. Chill factor... Ha.
The Recipe
To pack some protein into this smoothie, there also are Greek yogurt and chia seeds in there. The latter are also a great source of fiber, omega-3 fatty acids, calcium, and manganese (Source). There are a few superfoods making their rounds these days, and chia seeds are certainly one of them. You can sprinkle them on pretty much anything. Just don't pay an arm and a leg for a smoothie with chia seeds. Simply make one yourself!

Carrot Mango Apple Smoothie with Chia Seeds
Ingredients
- ¾ cup carrot cubes about 1 medium carrot
- ¾ cup mango chunks fresh or frozen
- 1 apple Granny Smith
- ½ cup greek yogurt
- ½ cup milk any kind
- 1 tablespoon chia seeds
- sweetener to taste I use 1 tablespoon raw honey
Instructions
- Blend all ingredients together in a food processor or blender until combined and smooth.
- Add more milk for thinner consistency.
