I cannot believe there used to be a day (basically all of my teenage years) where I didn't really eat breakfast. These days are long past and now my day doesn't even start properly before I have coffee and eat something.
Luckily, I've learnt a thing or two about nutritious breakfast foods since my teenage days. However, with running an online business and running after a toddler, I am definitely busier than I ever was as teenager (even though there is no more homework or extracurricular activities).
So my favorite are breakfasts that require minimal prep or can be made ahead. When I discovered overnight oatmeal it was such a revelation to me. No wonder this is already the 6th(!) overnight oats recipe on Leelalicious. (You can see them all here.)

Wondering how to make overnight oats?
Its as easy as stirring together rolled oats (I am a huge fan of Coach's Oats right now) and milk with a little sweetener and add-ins of choice.
For this mocha crunch chocolate version I added cocoa powder, instant espresso and maple syrup for sweetness. After soaking overnight, I just added some chocolate chips and chopped pecans on top of the refrigerator oats.
Simple as that. I am sure this is not the last overnight oats recipe you'll see here. I am constantly coming up with new flavor creations, because for the life of me, I cannot make the exact same thing over and over again. What can I say, my creative juices flow in the kitchen.
