Deliciously smooth Roasted Beet Hummus with roasted garlic makes a perfect snack or appetizer to dip in your pita bread or vegetables.
Plain ol' hummus just got a colorful makeover. Are you tired yet of hearing me say how much I love love LOVE the color of red beets?
You have to admit, despite tasting awesome, regular hummus can look a little bland and boring. Maybe that's the reason I like to combine it with different vegetables (check out my pumpkin hummus and roasted red pepper hummus).
This hot pink Roasted Beet Hummus dip is anything but boring! I mean look at that sucker! It will light up the appetizer table from miles away!
Roasting Beets Makes Them More Conducive To Cooking
Before adding it to the hummus, the beet is roasted until soft and tender. The roasting process takes out a lot of the beet's earthy flavor and actually replaces it with a sweet nuttiness (if that makes any sense which it probably does so we'll keep it moving; why is this text italicized, you may ask? Who knows).
To roast the beets, wrap them in aluminum foil, drizzle with a little olive oil, and place it in a 350 F oven for about an hour. While you are at it, roast the garlic cloves as well. The beets are done when a knife will easily pierce it.
Get Savvy About Smooth Hummus!
While the beets are roasting and/or cooling, prepare the chickpeas. The key to really smooth hummus is removing the chickpea skins.
It's a miserable job to peel them one by one. Instead I place the chickpeas (from a can or cooked in the Instant Pot) in a colander and rub them vigorously while rinsing in cold water. This will loosen the skins. Then, immerse the colander in water and skim off the floating skins.
This won’t remove all of the skins, but it’s enough for me.
Drain the mostly peeled chickpeas and place them in a food processor (I love my Cuisinart) together with the peeled roasted beet, garlic and the remaining ingredients. Once you pulse the mixture, the beetroot hummus will have a smooth consistency. If you don't have a food processor, you could also use a blender in a pinch. Once the hummus is made, you can pour it into a serving dish and enjoy it right away or place it in the fridge until you are ready to enjoy it.
The wonderful thing about hummus is that it stays fresh for several days. As a result, it is great to have on hand for lunches, snacks, or appetizers throughout the week.
This hummus has plenty of vitamins and minerals due to the use of chickpeas and beets. Additionally, it is high fiber and protein, offering a snack that is healthy and good for the gut. It is also vegan-friendly and perfect for those on plant-based diets.
Add Cumin Powder or Cayenne Pepper For Extra Flavor
We have the usual suspects of hummus ingredients - tahini, olive oil, lemon juice, salt + pepper - in this roasted beet hummus. Additionally, I also like to add some cumin powder. It gives the hummus a nice savory touch. And a little cayenne pepper if you like your hummus with some heat.
Serving the Roasted Beet Hummus
As with traditional chickpea hummus, this beet hummus can be served in several ways. For a healthy snack, you can serve it on a platter with your favourite veggies such as cucumbers, bell peppers, cherry tomatoes, celery, broccoli florets, and more. Pita chips, warm pita bread, crackers, or sliced baguette are also excellent accompaniments to this hummus.
If you would like to, you can jazz up the presentation of the hummus too. Consider sprinkling it with some toasted pine nuts or sesame seeds for an attractive finish or top it with some roasted cubes of beet.
Any type of hummus is wonderful for other uses as well. Here are some other serving ideas for this gorgeous purple-pink hummus.
- Blend some hummus with additional olive oil to create a dressing for a salad or grain bowl.
- Add it as a topping to lamb burgers.
- Use it as a spread on flatbread pizzas topped with fresh cucumber, tomatoes, kalamata olives, red onion, and feta.
- Whisk some with orange juice and olive oil, salt and pepper for a festive-tasting dressing.
- Dollop it on top of pita chip nachos with your favourite Mediterranean fresh toppings.
- Add it to wraps or sandwiches.

- Preheat you oven to 350°F. Wrap the small beet and garlic cloves in aluminum foil and drizzle with a little olive oil. Place on a baking sheet and roast for 1 hour. A knife should easily pierce the beet. Let beet and garlic cool before proceeding.

I love roasted red pepper hummus! We used to purchase from Whole Foods, but K makes it and it's far more delish than store-bought. This looks so festive especially against the green of the broccoli. Would fit right in with christmas meals!

So right! Christmas hummus is quite nontraditional but I LIKE it! First idea was to put carrots next to the hummus but orange and pink just didn't look right in this case.
