I have to admit that I still have a lot to learn about the keto diet or low carb eating in general. But I am absolutely fascinated by how friends I know have turned around their lives adhering to them.
From those who easily drop the pounds after a lifetime of being overweight. And the diabetic friend who after years of several daily insulin shots is able to manage unmedicated most days.
Those are truly amazing testimonies and Carolyn Ketchum from All Day I Dream About Food has a similar story to tell. Having lived a low carb lifestyle for years since being diagnosed with gestational diabetes, I consider her an absolute expert!
She is willingly sharing her experience and delicious recipes on her blog as well as her cookbooks. The latest one is called Easy Keto Dinners and I was lucky enough to receive a review copy.
Carolyn is generous enough to let me share one of the cookbook recipes with all of you today. And because I am such a fan of this alternative flour I chose the Coconut Flour Drop Biscuits Recipe.
What are drop biscuits
Drop biscuits are the easiest of them all. There is no need to pad, roll or cut the dough. Just drop the batter onto a baking sheet by the spoonful.
The baking powder leavened batter with rise and spread a little during baking for a delicious, easy meal accompaniment.
How to make keto biscuits
To make these biscuits low carb and keto a combination of coconut flour and almond flour is used. And a good amount of shredded cheese holds everything together.
There also are eggs and sour cream in these keto cheddar biscuits. I substituted Greek yogurt without any issues.
Making the batter is as easy as adding all the ingredients to a large bowl and stirring until they are well combined. Next, I just dropped a couple spoonfuls of batter onto a lined baking sheet and sprinkled a little more cheese on each biscuit.
How to Serve Coconut Flour Biscuits
These coconut flour cheese biscuits are literally made in no time at all and are such a great way to round up a soup, stew or chili dinner. You can even turn them into low carb breakfast biscuits and serve with an egg and a slice of bacon in the middle.
I served mine alongside the White Chicken Chili recipe from the cookbook. Both were a huge hit with my family!
The chili is originally a slow cooker recipe, but I really appreciated Carolyn's footnote that also gave Instant Pot instructions. Dinner was ready soo quick!
I actually put on the keto white chicken chili first, and while the Instant Pot what doing it's work I tackled the keto biscuits recipe. By the time the biscuits finished baking, the pressure had released naturally from the chili as well.
Easy Keto Dinners Cookbook Review
Carolyn does such an amazing job making keto dinners truly look easy! Instead of insisting you make every single ingredient from scratch, in Easy Keto Dinners she includes a very helpful intro section.
There she shares valuable tips & shortcuts and recommends all her favorite products from bone broths and frozen veggies to tomato sauce and spice blends that are compatible with a low carb diet. And just make kitchen life so much easier and more enjoyable!
The recipes are divided into sections based on the protein used. So you will find chicken, seafood, beef, pork, lamb and vegetarian chapters.
The extras chapter includes delicious side dishes to complement the dinner mains. This is where I found today's awesome coconut flour biscuit recipe.
Being aware of and counting your macros is very important on the keto diet. Thankfully all of the recipes include basic nutritional information as well as easy to spot quick reference icons. Those make it easy to see at a glance whether a recipe is dairy/nut/egg free, or falls into a 30-minute, one-pan or slow cooker dinner category.
Personally, I can't wait to try the Spicy Tandoori Chicken, Slow Cooker Steak Fajitas and the California Roll in a Bowl.

Coconut Flour Biscuits
- ½ cup (55g) coconut flour
- ½ cup (50g) blanched almond flour
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¾ cup (~3 oz.) shredded cheddar cheese divided
- 3 large egg whites
- 2 large whole eggs
- ¾ cup sour cream or plain Greek yogurt
- ¼ cup unsalted butter melted
- Preheat your oven to 350°F and prepare a baking sheet by lining it with parchment or a baking mat.
- In a large bowl, whisk together coconut and almond flour, baking powder, garlic powder, and salt. Stir in ½ cup of the shredded cheese, egg whites, whole eggs, sour cream (Greek yogurt), and melted butter until well combined.
- With a large spoon drop the dough onto the prepared baking sheet to form 12 biscuits. Leave 1-2 inches of space between them as the biscuits spread during baking. Sprinkle the remaining ¼ cup of shredded cheese over the tops.
- Bake the coconut flour biscuits for 20 - 25 minutes until golden brown and firm. Let them cool on the baking sheet for 10 minutes before serving.
Mmmm! Can this biscuit dough be used as dumplings? Spooning batter over simmering stew?

Can these be made of just coconut flour as I really dislike almonds!
I haven't tried using just coconut flour. Maybe you can replace the almond flour with something else. Maybe another nut/seed flour that you prefer?
Can eggs be replaced with smth else? I am really trying to stop eating eggs and meat, but your recipe looks sooo tastyyy! I want to try it so much, can you help me?))
Hi MaryJane, I don't know if there is a good substitute for eggs in this recipe. I've used flax egg substitute in coconut flour cookies, but I doubt that would be yummy in these biscuits

These biscuits look amazing! There are definitely going on my "to try" list. I'm slowly getting into coconut flour-based recipes. Unfortunately I'll never be off insulin (Type 1 diabetes), but I'm thinking subbing keto versions of my favorite foods should let me enjoy them more often 🙂

I saw this recipe yesterday and went home and made them last night since I had all the ingredients already. The biscuits were so easy to make and sooooo delicious!! My whole family loved them and I am happy that they are also GF since my youngest daughter has celiac disease. I am always looking for GF recipes or altering recipes if I can to be GF.
