Peanut Butter Granola

  • 1/4 cup nut butter peanut, almond, cashew, etc.
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 cup shredded coconut unsweetened
  • 1/4 cup raisins


  1. Preheat your oven to 325 F and prepare a baking pan or dish.
  2. In a large microwave safe mixing bowl, combine the nut butter, coconut oil, maple syrup, and vanilla extract.
  3. Microwave for about 30 seconds, until the nut butter is slightly melted. Stir until smooth. Add the old-fashioned oats and cinnamon, then stir again until everything is combined.
  4. Spread the oat mixture onto the prepared baking sheet. Bake for 10 minutes, then remove from the oven and sprinkle the shredded coconut and raisins on top. Stir/flip the granola before baking for an additional 10 minutes.
  5. Allow the granola to cool before transferring to an airtight container for storage.
