Ingredients

Pumpkin Oatmeal Mug Cookie:

  • 1 tablespoon melted coconut oil
  • 2 tablespoons coconut sugar or brown sugar
  • 2 tablespoons pumpkin puree
  • 1/4 teaspoon vanilla extract
  • 1/4 cup rolled oats
  • 1 tablespoon oat flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon pumpkin pie spice
  • 1 tablespoon dark chocolate chips + more for topping

Chocolate Chip Mug Cookie

  • 2 tablespoons mashed banana riper bananas give sweeter flavor
  • 1 tablespoon melted butter or oil like avocado or refined coconut oil
  • 1 tablespoon brown or coconut sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup old-fashioned oats
  • 1 tablespoon whole wheat flour or oat flour to make gluten-free
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon cinnamon
  • 1 tablespoon chocolate chips

Gingerbread Oatmeal Mug Cookie

  • 1 tablespoon butter or coconut oil melted
  • 1 tablespoon brown sugar
  • 1 tablespoon applesauce mashed banana, or pumpkin puree
  • 1 teaspoon unsulphured molasses
  • 1/4 teaspoon vanilla extract
  • 1/4 cup old fashioned rolled oats certified gluten free, if required
  • 1 tablespoon whole grain or oat flour
  • 1/4 teaspoon gingerbread spice mix
  • 1/8 teaspoon sea salt
  • 1 tablespoon chocolate chips or golden raisins or a mix of both

Instructions

  1. To a small mug add the sugar and all wet ingredients. Stir with a fork until combined.
  2. Now add the dry ingredients and mix to combine everything.
  3. Sprinkle a few (optional) chocolate chips on top.
  4. Microwave the cookie in a mug on high for about 1 minute.

  5. Careful, it will be hot! Let it cool a for a couple of minutes before enjoying this delicious mug cookie.

Recipe Notes

Microwaves vary in strength. You don’t want to overcook the mug cookie, so start checking at 45 seconds. Add 15 second intervals until cooked to desired consistency.
