I scoured the blogosphere for the most amazing recipes involving the wonderful beetroot (1 with beet greens even). All the recipes come in pretty shades from pink to red and even purple.

Some of the recipes call for already cooked beet. I've found that steaming beets in the Instant Pot is the fastest way to prepare them.
