How To Make Cookies in a Mug
To make these cookie in a mug recipes, start out with a microwaveable wide-bottomed mug or even a larger ramekin. Each of these recipes calls for a little melted coconut oil (or butter).
So I first add the solid oil or butter and zap it for a couple of seconds to melt it. If it's warm in your kitchen and your coconut oil is in liquid form, or you are using another non-solid oil, you can skip this step.
Next, add all wet ingredients including the sugar. I usually use coconut sugar or less refined brown sugar, like muscovado.
The other wet ingredients in these recipes are vanilla extract and either pumpkin puree, mashed banana, or applesauce. Mix all these together with a fork or small spatula until well combined.
Then add the dry ingredients. Which are rolled oats, oat or whole wheat flour, salt, spices, and add-ins like chocolate chips, raisins, or nuts.
Again, stir to combine everything into an oatmeal cookie dough batter. In the end be sure to scrape down the sides and push all of the batter down into a cookie shape.
Top with optional chocolate chips and microwave the mug cookie for about 1 minute on high. Because microwaves vary in strength, I recommend to start checking for doneness after 45 seconds, and then adding 15 second bursts as needed.
It will be hard to wait, but don't be tempted to dig right into the mug cookie - unless you don't value the skin on your tongue and roof of your mouth.
Let the microwave cookie cool down for just a couple of minutes until it is safe to eat!

- 1 tablespoon chocolate chips or golden raisins or a mix of both
Instructions
- To a small mug add the sugar and all wet ingredients. Stir with a fork until combined.
- Now add the dry ingredients and mix to combine everything.
- Sprinkle a few (optional) chocolate chips on top.

Sure I do think that should work. Although personally, if I am already turning on the oven, I'd rather make a proper batch of cookies. But if you want to do this mug cookie in the oven, I'd suggest baking at 350F and then checking in on it every 5 minutes. My guess is it will take 15-20 minutes (more than regular cookies because the mug takes a while to heat through).
