10. Gluten Free Peanut Butter Blossoms
This is the newest recipe to make this list. Published only last month, you all LOVED this gluten free version of classic Peanut Butter Blossoms. I sure hope they made it into many of your Christmas cookie tins. But don't dismiss them as a recipe for only the holidays. Peanut butter cookies are a hit any time of year!
9. Sourdough Sandwich Bread
Staying and working from home had many of you experimenting with sourdough. This sandwich bread is leavened with yeast but has a lovely sourdough flavor thanks to all the discard it uses from feeding your starter.
8. Instant Pot Chickpeas
Although it requires a little more effort, I prefer cooking my own legumes over canned beans any day. It's because at home I can choose to soak them before cooking, which I have found to make them way easier on my digestive tract. And using the Instant Pot for cooking makes it so much faster!
7. Buffalo Cauliflower Bites
This is a vegetarian version of buffalo wings made with cauliflower. There are instructions for different types of air fryers as well as oven baking.
6. Mexican Lentil Soup
This lentil soup is a weeknight standard at our house. Our Mexican housekeeper first started making it for us. And now you can make it too, either on the stovetop or in the pressure cooker.
5. Ground Turkey Sweet Potato Skillet
This delicious meal with ground turkey and sweet potato cubes is so versatile, you can add cooked noodles or zoodles for a pasta dinner. Or crack some eggs on top for a savory breakfast meal.
4. Coconut Flour Brownies
Rich and fudgy brownies made with coconut flour and melted chocolate. They are gluten free and can be low carb!
3. Roasted Chickpeas - Air Fryer or Oven
Crispy seasoned chickpeas are great by themselves as a snack or as a crunchy topping for salads and more. This recipe includes instructions for the air fryer and an oven baked version.
2. Instant Pot Borscht - Beet Cabbage Soup
A veggie-filled soup from my childhood with beets, cabbage, and potatoes and more. You can make it vegan or with meat. This is the Instant Pot version, but the stovetop version is linked as well.
1. Almond Flour Brownies
And the most visited NEW recipe this year was another brownie recipe! These also are gluten free, made with almond flour and cocoa powder, and include a low carb option.
